Kyufta-bozbash (Küftə bozbaş) is an Azerbaijani thick soup with meatballs, chickpeas and potatoes. Kyufta are meatballs served with various sauces, often as part of meat soups. Sometimes inside each meatball (kyufta) there is a piece of sour fruit (cherry plum or plum). Traditionally, kufta is made from lamb, but it also turns out very tasty from beef.

Ingredients for a 4 liter pot:
For meatballs:
Minced lamb or beef - 700 g
Rice - 50 g
Onion - 100 g
Dried mint - 2 teaspoons
Dried basil - 2 teaspoons
cilantro - 3 sprigs
Black pepper - to taste
Salt - 6 g
Prunes - 100 g
For soup:
Lamb or beef broth - 1-1.2 l
Chickpeas - 250 g
Potato - 600 g
Onion - 400 g
Fat tail fat - 50 g
Saffron - 1 teaspoon
Bay leaf - 2 pcs
Salt - to taste
Garlic - 30 g
Greens - for serving
