Wash the Tarkin peppers and make small cuts on the top. Drop the peppers into boiling water, a little at a time, for 2-3 minutes. Remove the peppers to a bag and sprinkle lightly with salt, repeating the process for each layer. Let the bag sit overnight under a weight. Place dried dill, celery, and garlic in the bottom of the container. Place carrots around the edges. Add the peppers to the container as well. Cover with brine.
Brine recipe:
For 10 liters of cold water, add 700g of salt and 70% vinegar.
Pour the brine over the peppers and cover the container with a lid. Let them sit for 15-20 days to salt.
If you like the peppers on their own, you can eat them that way. But they taste even better with cabbage. I have a tutorial on how to pickle cabbage on my channel🤗
