The backup cannot be restored iPhone is too old *FIX*
1. Navigate to your itunes iphone backup folder:-
WINxp -
CODE:
C:\Documents and Settings\yourusername\Application Data\Apple Computer\MobileSync\Backup
WIN7 -
CODE:
C:\Users\yourusername\AppData\Roaming\Apple Computer\MobileSync\Backup\
OSX -
CODE:
~/Library/Application Support/MobileSync/Backup/
Insert your own windows username where it says "yourusername" ** Some of these folders may be hidden btw

2. Find the most recent backup, this reflects the backup in itunes with no date (for me it's "iNeoTom's" without any dates next to it in itunes, and most recently modified date in the backup folder)
3. Theres a bunch of strings/files here, scroll down to info.plist (or just click on the top one and hit the "i" key on your keyboard :)
4. Open notepad (or PLISTs for OSX) and drag the Info.plist
