Mannik always brings back the nostalgic taste of childhood, when the trees were big, mom was young, and grandma was busy at the stove. It's also delicious, quick, and inexpensive. A mannik-like pie, called REVANI in Greece, is one of the most popular sweet desserts in the country. Anyone who's been there has definitely tried it. We've translated the recipe for classic Revani from Greek for you. Be sure to try it.
Revani (Mannik soaked in syrup)
200g - semolina
2 capsules vanilla
15g - baking powder
5 eggs
lemon juice (half a lemon)
SYRUP
sugar - 650g
water - 550 ml
1 tbsp lemon juice
1 tbsp melted butter.
Mix all dry ingredients. Separate the yolks from the whites. Beat the whites until stiff peaks form. Separately, beat the yolks for 10-15 minutes, gradually adding the lemon juice. Gradually fold the egg mixture into the whites and gently stir in a circular motion. Add the dry semolina mixture. Mix carefully, using a circular motion, to prevent the mixture from collapsing. Place on a greased baking sheet and sprinkle with flour. Bake for 40-45 minutes at 180 degrees Celsius.
SYRUP
Combine the ingredients in a saucepan and cook, stirring occasionally, over low heat for 8-10 minutes. Once the syrup has set, drizzle it over the finished pie. Cut into portions while still cool. Serve with ice cream or whipped cream.
