These are the most delicious pumpkin muffins 🔥 Believe me!
I tried dozens of recipes and found one that is really delicious! A real muffin, as it should be. Soft, light and porous - airy. These are exactly like that! Pumpkin muffins become aromatic, due to spices! Sweet, because pumpkin is unrealistically sweet! And so airy because of nut flour.
🔺I am often asked where to get nut flour. It's simple! Make it yourself!
🔸To do this, grind the nuts you are going to cook with in a blender. If your blender does not grind them to a powdery consistency, then how can I grind them additionally in a coffee grinder. That's it! The nut flour is ready!
🔺And one more thing! I cook pastries for myself without eggs, because unfortunately I can't have either egg whites or yolks. But! You can't make delicious muffins, pies or cookies without eggs. And I easily replace eggs in my baking with flaxseed flour.
🔸Where can I get it? Again, make it yourself! Grind flax seeds in a coffee grinder!
🔸Flaxseed flour is called "vegan eggs" for a reason. I used to pre-mix flaxseed flour with water, which resulted in a gel-like liquid that I mixed into the dough. But, many years of experience have shown that you can add dry flaxseed flour to the dough. Its quality does not suffer from this, and kneading the dough is much easier. You don't have to break and mix the dark lumps of "vegan eggs" until smooth. In general, I don't bother with this anymore and immediately mix the flaxseed flour with gluten-free flour. Faster and easier!

🔺For pumpkin muffins you will need (for 10 pcs)
🔹Baked pumpkin – 126 g
🔹Fresh pumpkin – 150 g
🔹All-purpose gluten-free flour – 7-8 tbsp (heaped)
🔹Cashew flour – 4-5 tbsp
🔹Crushed almonds – 4-5 tbsp
🔹Starch (any) – 2 tbsp
🔹Flaxseed flour – 2 tbsp
🔹Vegetable milk – 100-130 ml
🔹Olive oil – 2 tbsp
🔹Soda – ½ tsp
🔹Lemon juice – 1 tbsp
🔹Sweetener to taste (don’t add too much, the pumpkin is already sweet)
🔹Cinnamon – 1 tsp
🔹Nutmeg – ½ tsp
🔹Walnuts or pecans – 1 handful
🔹Pumpkin seeds for decoration

🔺Is everything ready? Let's get started!⠀
🔸Mix flour, nuts, starch, sugar substitute and spices in a bowl⠀
🔸Mix pumpkin, vegetable milk, egg substitute, olive oil in a blender.⠀
🔸Add soda to the blender and pour lemon juice on it. Mix again.⠀
🔸Stir the nut-flour mixture into the pumpkin mixture. The dough should be moist and dense. ⠀
🔸At the very end, stir in the broken walnuts or pecans
🔸Grease the molds with oil.
🔸Put in the dough, filling it 3/4 full. You can put whole pecans or walnuts on top, pumpkin seeds and bake in the oven at 185. ⠀
🔸Bake longer than regular muffins. 40-50 minutes, or until a toothpick comes out dry. Let the pumpkin bake thoroughly. ⠀
🔸Let the muffins cool for 10 minutes and enjoy!
🔺You can experiment with flavors and add other spices and ingredients to pumpkin muffins, to your taste. And I will give you ideas on what else pumpkin goes well with, so that you can make muffins that are delicious every time.
🔺So, what products go well with pumpkin:
🔹Chocolate, cocoa or carob. Dark chocolate with a cocoa content of at least 70% softens the sweetness of pumpkin and enhances its fruity notes.
🔹Oranges or tangerines. Enhance the fruity notes of pumpkin, making them play in a new way.
🔹Ginger and lime. Pumpkin loves spices and citrus fruits, and its combination with lime and ginger will give you a great result.
