🇪🇸Mondongo is a delicious soup made with tripe and beef feet, mixed with a wide variety of vegetables, and the one I make is super Venezuelan, inspired by the best Mondongo in the world; the one my dad used to make 😍🙏. I hope you love it, and enjoy!


INGREDIENTS:
Serves: 15-20
1 1/2 kg Beef tripe
2 1/2 kg Beef feet
Lemon or Vinegar (for cleaning the tripe and feet)
6 Liters of Water
1/2 kg (2 cups) Yucca
1/2 kg (2 cups) Pumpkin
2 Large potatoes
2 Large sweet potatoes
1 Cup Chopped green beans
3-4 Ears of corn
3 Medium carrots
1/2 kg (2 cups) Celery(*)
1/2 kg (2 cups) Taro(*)
1/2 kg (2 cups) Yam(*)
2 Tbsp Worcestershire sauce
2 Tbsp Vinegar
3 Tbsp Mustard
3 Tbsp Chopped parsley
½ cup chopped cilantro
Salt and pepper to taste

(*) I didn't use them. I can't find them here 🤷🏻‍♀️

SOFRITO:

3 Tbsp olive oil
1 ½ cups chopped onion
2 Tbsp crushed garlic
1 cup chopped leek (white part only)
1 cup chopped scallions (white and some green parts)
½ cup chopped cilantro
1 cup chopped red bell pepper
½ cup peeled and seeded tomato
3 Tbsp sweet pepper or 1 seeded habanero pepper (or to taste)

DOUGH BALLS:

1 cup precooked corn flour
1 ¼ cups water
½ tsp salt

1 1/2 Kg Beef tripe
2 1/2 Kg Beef feet
Lemon or Vinegar (to clean the tripe and foot)
6 Quarts of Water
1 lb (2 cups) Yucca
1 lb (2 Cups) Auyama (Pumpkin)
2 large potatoes
2 large sweet potatoes
1 Cup of chopped Green beans
3-4 Corns
3 medium Carrots
½ Kg (2 Cups) Celery (*)
½ Kg (2 Cups) Ocumo (*)
½ Kg (2 Cups) Yam (*)
2 Tbsp. Worcestershire willow
2 Tbsp. White Vinegar
3 Tbsp. mustard
3 Tbsp. Chopped Parsley
½ Cup of chopped Cilantro
Salt and pepper to taste

(*) I didn't use them. I don't get them here.

SOFRITO:

½ cup chopped cilantro
1 cup chopped Red Bell Pepper
½ Cup Tomato without skin and without seeds
3 Tbsp. Sweet pepper or 1 Habanero pepper without seeds (or to taste)

DOUGH BALLS:

1 cup of precooked Cornmeal
1 ¼ Cup of Water
½ Tsp. of Salt
