Tortilla Tips: Smush Test
Do you like dry, crumbly tortillas? Didn’t think so! Here’s a tip for finding out whether your masa is thirsty: roll a ball, smush it down with a finger, and if the edges crack, it needs more water. If the edges are smooth, press and cook away! Don’t forget to cover your mixed mass with a damp towel to keep it hydrated.
