Fried Rice Recipe
(2 people)
Jasmine rice (1-2 days old)
1 small onion
1 bunch of spring onions (7-8 sticks)
5 cloves of garlic
1 red capia pepper
1-2 small green peppers
1/2 carrot (small)
salt
soy sauce
black pepper
red pepper flakes
granulated sugar
Instructions:
Chop the white parts of the spring onions and one onion. After mincing the garlic, sauté over high heat. Once they begin to color and caramelize slightly, add the finely chopped peppers and carrots. Stir-fry for about 7-8 minutes, allowing the peppers to shrink and brown.
Add the rice to the cold jasmine rice. Separate the rice into grains and stir while continuing to heat at high heat. After thoroughly mixing and frying the rice and vegetables, add 1 teaspoon of black pepper, 1 teaspoon of red pepper flakes, and a pinch of salt, depending on your preference.
Add 4 tablespoons of soy sauce (oyster sauce is also an option), mix well, and continue frying.
After mixing the soy sauce, taste the dish thoroughly and add sugar if necessary. One teaspoon of sugar is usually sufficient to neutralize the astringent flavor of the soy sauce.
Add the green parts of the spring onions at the final stage and serve. Bon appetit!
