How big of a difference is there between 8-bit and 10-bit footage? A ton. 10-bits gets your image past that banding threshold and provides a lot more flexibility when editing, so if you can shoot at 10-bits over 8-bits for video then we definitely recommend it. There are also cameras like the Alexa Mini that can shoot at a whopping 16-bits (281 trillion colours) but that's for another day.
if you only have an 8-bit camera but you edit with Davinci Resolve, check out the "deband" effect in the color grading tab - it works quite well!
