Cottage cheese Easter cakes:
~ 600g flour
~ 250g cottage cheese
~ 250g butter
~ 250g sugar
~ 2 eggs
~ 15g baking powder
~ 200g nuts
~ 250g dried fruit
~ 200ml rum/whiskey/tea
~ zest and juice of 1 lemon
butter and powdered sugar for brushing the cake
Directions:
1. Pour a glass of strong alcohol over the dried fruit and lemon zest and leave overnight.
2. The next day, beat the softened butter with sugar, then add the eggs, cottage cheese, and dried fruit alcohol.
3. In a separate bowl, mix the flour, baking powder, chopped nuts, and chopped dried fruit.
4. Combine the wet and dry ingredients and knead the dough.
5. Bake for 1 hour at 180 degrees Celsius.
6. While the cake is still hot, grease it with butter and sprinkle with powdered sugar on all sides. After cooling, drizzle with sugar icing (2 egg whites + 300g powdered sugar).

Mastic recipe:
300g powdered sugar
5g gelatin
30g water
40g cornstarch
10g lemon juice
1. Mix the gelatin with water and let it swell.
2. Melt it over medium heat, add the lemon juice and 100g powdered sugar.
3. Combine 200g of powdered sugar and starch in a blender. Pour in the gelatin mixture, adding lemon juice if needed.
4. The fondant dries quickly, so keep it covered with plastic wrap.
5. Add food coloring and cocoa powder to achieve the desired shade.
