Muzhdei sauce is a Moldovan pride. Since time immemorial, villages in Moldova have been preparing mamaliga, the most popular national dish. This simple corn porridge, very thick and filling, is served both as a stand-alone dish and as a bread substitute. However, serve it with muzhdei, and the porridge is completely transformed. Garlic plays a key role in the sauce, imbuing mamaliga with a mouth-watering aroma. The second ingredient, which significantly influences the taste, is broth. The original sauce is prepared with meat, fish, or vegetable broth, each time achieving the same lingering garlic aroma, but with hints of meat, fish, or vegetables. Today, we're preparing the classic and simplest recipe for Muzhdei sauce.
Since corn porridge was once considered a poor man's food, housewives made mujdei sauce from the simplest and most readily available ingredients.

For the classic mujdei sauce, you'll need:
Garlic – 100 g;
Broth – 50 ml;
Black pepper – to taste;
Olive oil – 40 ml;
Salt (coarse sea salt) – 5 g.
Preparing classic mujdei:
Separate the garlic into cloves, peel, chop roughly, and place in a mortar and pestle. Add salt. Grind the ingredients until smooth. Dilute the garlic paste with broth. Add the pepper, stir, pour in the oil, and stir again. The classic Moldovan sauce is ready.
