The familiar taste of eclairs with butter cream!
INGREDIENTS:
Water 250 ml
Butter 100 g
Pinch of salt
Flour 150 g
Eggs 4
Cream:
Butter 250 g
Condensed milk 250 g
HOW TO COOK:
Make the choux pastry: Heat water with butter and salt on the stove. When it boils, add the flour and turn off the heat. Knead the dough quickly. Then transfer to a bowl, cool slightly, and add the eggs one at a time with a mixer. If the dough is too hot, the egg may curdle immediately, which is unacceptable.
The dough should be moderately thick. Transfer it to a pastry bag and form the eclairs. Because they "grow," don't squeeze them too close together; ideally, leave 3 cm. Seal the tips of the eclairs with a finger dipped in water.
Bake in two stages: 25 minutes at 200 degrees Celsius (480 degrees Fahrenheit) top and bottom, and immediately after 10 minutes at 160 degrees Celsius (320 degrees Fahrenheit), without opening the oven.
During this time, you can make your favorite cream: whipped cream, custard, or buttercream. I used buttercream because it's quick and tasty. Beat good butter until white; it should be at room temperature, then pour in the condensed milk and cook until the cream is set. You can fill the eclairs using a nozzle, or cut them in half. Decorate with powdered sugar, if desired, or, like me, with chocolate and nuts. Definitely try it - I highly recommend it! 😍🔥
