Risotto Mantecato al Gavi e Robiola di Roccaverano. Risotto is one of the treasure dishes of Italy, traditionally rice is toasted together with onions in a fat most commonly butter, sometimes deglazed with wine, and cooked in stock until the rice is "al dente" and the stock reduces to a thick creamy sauce.

In this video, we attempt to break down the main steps for making any kind of risotto, in a modern lighter yet luxurious key. In doing so we try to answer the two questions Is there a better way to make risotto? and how important traditions are when making this dish?


Recipe:


For the Acidic Butter (yields 25 portions)


200g High-Quality Low-Water content butter
150g of White wine
200gof White wine Vinegar
90g of Onions or Shallots


For the Risotto (1 Portion)

85g of Rice Vegetable stock Parmiggiano Reggian
25g Of Robiola di Roccaverano
8g Of unsalted Butter
8g Of Acidic Butter
Salt to taste
