Launch a
Catalog Items are just a way to define inputs and launch flow. There are many reasons why the catalyst may be email.
STEP BY STEP
Create the Catalog Flow as if you assumed form entry.
Create a new Flow Action to parse an email body for name:value pairs (OR download from share)
Create a separate Flow to listen for specific mail cues, then launch the desired Catalog Item.
Use the custom Flow Action to parse the Trigger's Email record.
In the Launch Catalog Item flow action, drop the Email Parser action's object into each variable. Use the "Get Data from Name/Value Pairs" transform to select which variable you wish to use for population.
Repeat for each variable.
