Mac Pro 5,1 Catlina install and Opencore install, links below. I followed the first link
then the second. Running Opencore 0.5.9 and Catalina 10.15.5. So far so good and its been over a week. Pro Tools and Final Cut Pro X running great.

You can get Martin Lo's Mac Pro 5,1 Opencore install and updates here scroll down to th emiddle of the page after his videos to grab the .zip currently 0.6.3 is the latest version of opencore.

Easy OpenCore packge and instructions make sure to turn SIP off.
