1/4 cup sugar (50g)
3/4 cup mashed pumpkin (180g)
3 and 1/2 cup all purpose flour (435g) plus more for the counter
2 and 1/4 tsp instant yeast (7g)
1 tsp salt (5g)
1 tsp cinnamon powder (5g)
1/3 cup unsalted butter (70g)
2 tablespoons of oil for the bowl
Eggwash: 1 egg and 2 tablespoons of milk
