Introduction
Recipe Name: Exotic Mushroom Dynamite
Usage: Snacks
Similar to: Chicken Dynamite

Mushroom Group: Oyster Group/Lions Mane
Ingredients Main:
Black Pearl Mushroom - 250 g (Any Oyster mushroom & Lions Mane mushroom)
Tempura flour - 1 cup
Cold Water - As Needed
Corn flour - 1 cup
Green onion (Chopped for garnishing)
Dynamite sauce:
Mayonnaise Light - 200 g
Paprika - 10 g
Sriracha Sauce - 35 g
Ketchup - 20 g
Mustard - 5 g
Garlic powder - 3g
vinegar - 5 g
Honey - 3 tsp
Chilli garlic sauce - 30 g
Preparation:
1. Begin by gently brushing the mushrooms with a soft-bristled brush or a clean, damp cloth to remove any dirt or debris that may be clinging to them.
2. Since Superlicious Mushrooms are cultivated in a very clean environment washing is not required.
3. Pat the mushrooms dry with a clean towel or paper towel to remove any excess moisture.
4. Remove the stem by cutting it with a knife, place the top half of the mushroom on a cutting board, and cut into ½-inch thick pieces.
5. Other than black pearl & king oyster, most of the oyster mushroom stems are hard to cook & they are recommended to be discarded.
Cooking:
1. Mix together tempura flour and cold water to make a thin batter.
2. Mix all the dynamite sauce ingredients in a bowl. (You can even store this in the fridge for 20 days)
3. Preheat oil to 160 degrees Celsius. If you don't have a temperature gauge use a pinch of flour & drop it in hot oil, If the flour sizzles & immediately floats to the surface, the oil is likely at the right temperature.
4. Coat the mushrooms in dry cornflour and dip in batter till fully coated.
5. Deep fry for 4-5 Minutes until golden brown.
6. Coat in the prepared dynamite sauce and garnish with green onion.
Safety Instructions:
1. Always use a sharp knife, when you use a dull knife to cut, you need to apply more force. As a result, the knife is more likely to slip and this increases the risk of injury.
2. To prevent contamination, it is important to clean your knife as soon as you’re done using it. Leaving your knife on your cutting board or in a sink full of soapy water clutters your kitchen and creates opportunities for contamination and injury.
3. Always use a cutting board when cutting ingredients. This will allow you to cut consistently and protect your work surface in the process.
4. Never leave your stove unattended while cooking. Stay in the kitchen while you're frying, grilling, or broiling food. If you have to leave the room—even for just a moment—turn off the stove.
5. Keep cooking equipment clean. Crumbs in a toaster, built-up grease on the stovetop, and excess dust behind your appliances are fire hazards.
Chef's Recommendation
1. We can also use Lion's Mane, Elm Oyster & Grey Oyster instead of Bleak Pearl.
2. Dynamite Sauce can be used in other recipes.
