How to freeze plums for the winter.

Today we will talk about harvesting plums for the winter. Despite the apparent simplicity, there are several important points in freezing plums.
DO NOT FREEZE PLUMS (AND IN GENERAL PREPARING PLUMS IN ANY FORM) WITH PITS, THE PITS CONTAIN SUBSTANCES HARMFUL TO HEALTH!
You need to choose ripe or slightly unripe plums. This way the pulp will easily separate from the pit and the cut plum will not flow with juice.
Do not take fallen or damaged fruits.
Soak the plums in water for 15 minutes. Rinse well in a colander under running water.
Place on a towel and let the fruits dry.
Using a sharp knife, cut the plum lengthwise. The knife slides along the pit and you get two even halves.
Place the pitted plum halves on hard, even objects suitable for freezing, such as a cutting board, baking sheet or baking dish with a flat bottom.
Cover with cling film or a bag on top. Try to keep the halves apart and prevent them from freezing.
Send them to the freezer for a day. When they freeze and harden, you need to pour them into freezer bags and tie them tightly.
If necessary, it is convenient to take out the bag, select the required amount of plums, and put the rest back in the freezer. If you put plums in a bag or container immediately after processing, bypassing the freezing stage on a flat surface, you will get a frozen lump, from which it will be very inconvenient to break off the plum.
This method is also good because the resulting halves are practically not damaged and do not change shape, which is very important for those who like to decorate their baked goods with berries and fruits.
