So, we make a knife from 65G steel. The theoretical part.
What is it?
Structural / manganese / wear-resistant steel.
Where to get it?
High-quality springs, brake bands, friction discs.
Availability.
There's a lot of this material; it could just be lying around on the floor in every garage.
Similar materials abroad.
USA - 1566, Europe - 66Mn4.

Composition:
Carbon: about 0.65%, medium-carbon steel
Manganese: about 1%
Iron 97%
Other impurities are insignificant.

In progress. There's absolutely no information in the masterbatch, so we'll rely on the chemical composition.
Normalization: 830°C without holding, leave to cool in air.
Forging. From 1250°C to 760°C.
Quenching. At 830°C. Only in oil.
Tempering. For 1 hour.
200°C = 61 HRC
400°C = 46 HRC

Features.
Manganese steels have high abrasion resistance due to the work hardening effect and high impact toughness. They are most often used to make cleavers (knives, hatchets), machetes, axes, and all sorts of custom cleavers.
However, during quenching, impact toughness can mutate into severe brittleness. The moral of the story: tempering is essential and very important.
Steel rusts; etch it or keep it in oil.
Steel has a high risk of becoming brittle.
This occurs during pickling. The metal becomes saturated with hydrogen and becomes very sensitive to any lateral loads—this is called hydrogen embrittlement, or pickling embrittlement. This can be eliminated by soaking it in oil at 150 degrees Celsius for an hour or two. This doesn't always help, and then you need to re-anneal it; don't overdo the pickling.

Verdict.
The skill and practice requirements aren't particularly high. You'll do just fine.
In the heat treatment, don't overdo the hardness. Keep your cool.
The material is suitable for chopping tools.
Overall, good.
