Pesto requires no cooking; all ingredients are simply chopped and mixed. Pesto sauce can be stored in the refrigerator for 3-4 days in a tightly sealed container. Afterwards, it loses its aroma and changes its flavor and consistency. But this sauce is so delicious that it usually doesn't need to be stored for long—it's all eaten immediately after preparation.
It's also worth noting that dishes using pesto sauce should be paired with a dry white wine, as red wine acquires a bitter, metallic taste due to the garlic and basil in pesto.
