Ingredients:
2 medium potatoes, boiled and peeled
1 carrot, grated
1/2 cup finely chopped cabbage
1/4 cup finely chopped green beans
1/4 cup finely chopped onion
Salt to taste
Oil for frying
Instructions:
In a large bowl, combine the boiled potatoes, grated carrot, chopped cabbage, green beans, onion, and salt. Mix well until all the ingredients are combined.
Form the mixture into small balls, about 1-inch in diameter.
Heat oil in a frying pan over medium heat.
Once the oil is hot, add the vegetable balls and fry until golden brown on all sides.
Remove the vegetable balls from the oil and drain on paper towels.
Serve hot with your favorite chutney or dip.
Tips:
For a crispier coating, you can dredge the vegetable balls in breadcrumbs before frying.
You can also add other vegetables to the mixture, such as peas, corn, or bell peppers.
To make the vegetable balls ahead of time, shape them into balls and place them on a baking sheet lined with parchment paper. Freeze for 30 minutes, then transfer to a freezer-safe bag and freeze for up to 3 months. When ready to cook, thaw the vegetable balls in the refrigerator overnight. Fry the vegetable balls as directed above.
