The best gluten free cupcakes I have ever made! Strawberry champagne🍓🍾 🧁
This was inspired by a gluten free bakery back where we live in Spokane WA. @colesbakeryandcafe I was craving their cupcake and decided to attempt it myself!
Not only did I make a dozen cupcakes for the price of 2 at the store, they came out really close in quality! 💕💕
My favorite recipes are ones that a few hacks that make something simple taste amazing, and this fits the bill!!
The secret is the buttercream I believe! The strawberries also keep the cupcakes moist and add a nice flavor boost!
I simply used a gluten-free cake mix, (we like @bluediamond cake mix ) but used a 50 50 mix of puréed strawberries and champagne to add as the liquid to the batter in place of water!
The frosting I made from scratch and it was amazing!
1/2 cup crisco butter flavored (double this and omit butter for dairy free)
1/2 cup room temp butter (You can double the butter and omit the crisco)
4 cups (more if needed) powder sugar
3 tablespoons puréed strawberries (I use frozen, dethaw, and blend)
3 tablespoons champagne
1 tsp vanilla
Pinch salt if your butter doesn’t have salt
In a stand mixer beat butter and crisco for 3 minutes. We want that stuff fluffy!!
Add 3 cups powder sugar, I cup at a time. Add in the rest of the ingredients.
Then add in extra powder sugar until you get the right texture (thick enough to spread)
Beat for another couple minutes to insure it is smooth and fluffy!!
