I couldn't wait to share the recipe for these autumnal fritters with you, with their soft, fragrant center and crunchy shell...
🍂 This quick and easy recipe requires just a few ingredients we always have in the pantry;
🍂 They're ready in just a few minutes;
🍂 Everyone, young and old, will fall in love with them.
TRIPS
Choose a suitable frying oil: the recommended one, and one I like very much, is peanut oil. Alternatively, you can use specific frying oils (like Friol, for example); don't use olive oil, or your fried food will be heavy;
To check that the oil is hot enough (if you have a frying thermometer, the recommended temperature is 170°C) before frying the fritters: dip a clean wooden skewer into the oil; if many small bubbles form around it, the oil is ready and you can begin frying;
BE VERY CAREFUL WITH HOT OIL AS IT CAN CAUSE SERIOUS BURNS AND HOUSE FIRES;
Form the fritters using two teaspoons, taking a moderate amount of batter (the batter contains yeast, so the fritters will rise during cooking);
Cook a few fritters at a time; avoid overcrowding the pan, as this lowers the oil temperature and prevents them from cooking properly if crowded together;
Using a slotted spoon or a small, fine-mesh strainer, occasionally remove the crumbs of batter that inevitably form from the oil. If left in the pan, these crumbs will slowly darken and burn, ruining the quality of the oil and the flavor of your fritters (in addition to creating harmful substances).
Once you're finished frying, let the oil cool, return it to its original container, and dispose of it at your nearest recycling center. Don't flush it down the sink, as it's harmful to the environment and will damage your plumbing.
VARIATIONS
Of course, you can replace the chestnut flour with the same amount of 00 flour and make soft, classic fritters.
In this case, I recommend adding the grated zest of half an untreated lemon to the batter.

50g sugar
20g sunflower oil (or your favorite seed oil, corn or peanut, except olive oil, which weighs down the consistency and flavor of the dough)
30g organic milk
1 teaspoon vanilla extract (or a quarter of a sachet of vanilla extract)
100g 00 flour
40g chestnut flour (or 40g 00 flour, to make classic pancakes; in this case, add the grated zest of half an untreated lemon)
1/2 sachet (16g) baking powder
1 liter frying oil (peanut or Friol-type)
Icing sugar for decorating

60g organic milk
2 teaspoons vanilla extract (or half a sachet of vanilla extract)
200g plain flour
80g chestnut flour (or 80g plain flour, to make classic pancakes; in this case, add the grated zest of an unwaxed lemon)
16g sachet baking powder
1 liter frying oil (peanut or Friol-type)
Icing sugar for decorating
