Our Potato Salad recipe is a healthier dish full of flavours, mix of fresh herbs, extra virgin olive oil, and vinegar. This is a great side dish which can accompany any protein of your choice with a tasty and healthy twist.

For the salad:
1kg yellow flesh potatoes
2 shallots
½ cup capers
½ kalamata olives pitted
1 bunch spring onion
½ bunch Italian parsley
½ bunch dill
For the dressing:
1 lemon zest
1tbsp dijon mustard
75ml red wine vinegar
150ml olive oil
Salt/pepper (to taste)
This dish serves 4 people with a prep time of 40 minutes and total cook time of 50 minutes.
