Bake a delicious summer squash casserole. This is one of my favorite summer squash recipes. The full recipe is below.

Recipe: SUMMER SQUASH CASSEROLE
6 cups yellow squash or part yellow and part zucchini
1 cup shredded carrots
1/2 cup diagonally-sliced celery
1/2 cup chopped onions
2 cups water
In 3-quart saucepan bring water to boil and add vegetables. Cover and cook about 5 minutes or until celery is crisp tender and drain.
Combine these together in a small bowl and add to cooked vegetables.
Mix well.
1 cup dairy sour cream
1/2 tsp dillweed
1 can condensed cream of chicken soup
1 cup shredded cheese
Mix together:
1/2 cup margarine, melted
6-oz package stuffing mix (I use either chicken or turkey flavored)
Grease a 9 x 13-inch pan. Spread half the stuffing on the bottom of the pan. Spread the vegetable mix over stuffing and put remaining stuffing on top.
Bake in 350-degree oven for 30 to 40 minutes.
