WHITE BREAD

Ingredients: (for 2 loaves)
1000g flour (type 550)
370g milk
200g buttermilk
100g butter
50g sugar
25g salt
35g yeast

Preparation:
Put all ingredients in the food processor. Make sure to separate the salt and yeast. Then knead everything together for 4 minutes on a slow setting and 8 minutes on a fast setting and let it rest for 45 minutes. After the resting time, divide the dough into two equal parts and then shape into rounds. Let it rest for 10 minutes and then let it rest for a long time. Now place the loaves either on a baking sheet or in a proving basket if you are baking on a baking steel or baking stone. Let it rise there for a final 1-2 hours, until it has approximately doubled in size. Meanwhile, preheat the oven to 220°C (top/bottom heat) using a baking steel or baking stone. Also preheat a bowl or pan with sauna stones or stainless steel screws or nuts. After proofing, spray or brush the loaves with water and then score them. Place them in the oven and pour about 70ml of water onto the sauna stones. Immediately reduce the temperature to 200°C (400°F) and bake for about 40-50 minutes.
