Two layers of crisp puff pastry, banketbakkersroom (thick pastry cream) in the middle, and on top a pink glossy icing.For once we must stop eating the Tompouce all at once, the way we always eat life.
This Nation, this city, these streets… I’ve always been living here. My world is contained in this window…More people pass by this frame in a single day than I have ever known in my entire life.
They say that in Amsterdam people don’t close the curtains… a sign of transparency and mutual oversight.Spinoza said: “The purpose of the state is freedom.”And our freedom is a bit like choosing whether to close these curtains or not: appearing normal is not freedom; that is lived far from this shop window, in the naked unfolding of ourselves.
“Natuur is voor tevredenen of legen.”“Nature is for those who are satisfied or empty.”said J.C. Bloem.“Soaked with rain, on a drizzly morning,Simply happy, in the Dapperstraat.”I think of this poem every time it rains: always.I’m fascinated by those who feel simply happy.In truth, I can feel that lightness only when the sun is out, like today… and, usually, it doesn’t happen.
And now, here is my guide: “how to eat the Tompouce.”First: savor it whole, in the totality of its flavors. Then separate the two layers, first the base and then the glazed, sweeter “roof.” Do it with bare hands, getting messy, to eat with as many senses as possible.
I break things down, I feel, I analyze, and I understand.That’s how I know.That’s how I eat the Tompouce.That’s how this sunny day becomes a sunny day.
