What is the glycemic index? 🤔

The glycemic index of a food refers to that food's effect on blood sugar levels. Blood sugar levels rise after eating foods containing carbohydrates (sugars and starches). Different foods containing carbohydrates affect blood sugar levels differently.

The glycemic index compares the rise in blood sugar after eating a certain food with the rise that occurs after eating a reference food, often glucose (Glucose: a very basic sugar different from table sugar). A food often used as an example is white bread. It has a relatively high glycemic index of 70, compared to glucose, which is 100.
