Salt + pepper (½ tsp each)
1 tsp turmeric
1 tsp garlic powder
2 tbsp Jamaican curry powder
1 tsp Old Bay
1 tsp paprika
1 tsp chicken seasoning
1 onion, diced
1 red bell pepper + 1 green bell pepper, diced
Fresh thyme (about ⅓ cup leaves)
1 can pigeon peas
1½ cups long grain white rice
2½ cups chicken broth
Optional flavor boosts:
2 cloves garlic, minced
1 tbsp freshly grated ginger
