An omelette containing pasta- happy to give it a try. A.K.A. FRITTATA DI SPAGHETTI
11 ounces spaghetti
4 large eggs
1/4 cup freshly grated Parmigiano-Reggiano cheese
salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
4 slices mozzarella
medium tomato
