Healthy vegan tom yum soup that is low calorie, and delicious! Today I am making a Thai-inspired tom yum soup without shrimp, inspired by the original recipe from Eating Thai Food (https://www.eatingthaifood.com/tom-yu...! This soup is so easy to make at home, as long as you are able to find some of the traditional ingredients such as kaffir lime leaves, lemongrass and vegan fish sauce (check out my Amazon links below if you need some help finding these items!) This recipe is great for weight loss as you can easily add a bunch of healthy veggies & tofu to make it a filling meal (see calories & macros below!) Hope you guys enjoy!

🌱 Tom Yum Soup:
8.5 cups (2 liters) vegetable broth
10 kaffir lime leaves
5 stalks lemongrass
10 Thai chilis
2 inch piece of galangal
5 cloves garlic
350g mushrooms (I used 200g cremini & 150g black oyster)
2 onions
1/2 cup vegan fish sauce* (https://amzn.to/3v8sMBF)
2 large tomatoes
1/2 cup lime juice
*If your soup is not salty enough, you can add up to a few more TBL fish sauce. If you think it needs some sweetness, you can add a few tsp. of sugar.
For garnish: a few sprigs of coriander
Add when serving: any cooked veggies you like, noodles (see above for some healthy noodle options from Amazon!) or even some tofu. Enjoy!
