In this Guatemalan town, they cook underground.
I went to see how they unearthed the barbacoas of Poptún in Petén.
It's not a common barbacoa; these are pure meat tamales with recado (seasoning), cooked underground in special ovens for a minimum of 12 hours.
The meat is super tasty, something I'd never tried before. And of course, it's eaten with a corn tortilla.
It's only prepared on special occasions, and the goal is to spend time with the family.
Also, in Poptún, there's the barbacoa festival, or PIB in the Mayan language, where one weekend a year they prepare this tradition for the entire town and visitors.
