Recipe & Instructions (serves 2-4):
-1/2 lb. elbow macaroni
-1 shallot, chopped
-Oil (to cook shallot)
-Salt and pepper to taste
-1 tbsp butter (salted or unsalted)
-1 tbsp all-purpose flour
-1 tbsp melted butter + 1/2 cup panko bread crumbs
-1 1/2 cup heavy whipping cream
-1/4 tsp seasoning salt (I used Lawry's)
-1/4 tsp pepper
-1/4 tsp mustard powder
-1/8 tsp turmeric powder
-1/4 tsp dijon mustard (optional)
-2 1/2 cups cheddar cheese
-Cook elbow macaroni in boiling water until cooked thoroughly. Set aside.
-Cook chopped shallot in oil over medium heat until translucent. Add salt and pepper to taste. Set aside.
-Add 1 tbsp butter into a medium-sized pot, over medium heat, whisking until butter begins to bubble.
-Add 1 tbsp flour and whisk for 1 minute to allow flour to fully cook.
-Add heavy cream and continue to whisk until mixture bubbles and becomes thick.
-Turn off heat and add seasoning salt, pepper, mustard powder, and turmeric powder. Whisk.
-Add dijon mustard (optional) and whisk.
-Add cheddar cheese in 1/2 cup increments, whisking in between.
-Whisk in the elbow macaroni, and then whisk in the chopped shallots.
-To Bake: Pour mixture into casserole dish.
-Mix together melted butter and panko bread crumbs and spread evenly over mixture.
-Bake at 450 degrees for 10-15 minutes or until mac and cheese begins to bubble and bread crumbs are a nice golden brown color.
