This is a three-tiered achievement series - first defeat, then defeat after breaking the shield in one hit (needs three stacks), then defeat without getting hit at all.
This actually took a few tries since I didn't know what the next tier up would be for the achievement, but I believe you could feasibly get them all at once. Good luck dodging!!
