✅ 00:00 COOK THE QUINOA
I recommend cooking a batch of quinoa on the weekend to use in your breakfasts, but also for making lunches like bowls, burrito wraps and soups.
1 cup rinsed quinoa (any color)
1 + 3/4 cup water
Transfer to a saucepan, cover and bring to a simmer. Then, turn down the heat to medium-low and keep simmering for about 15 minutes or until cooked through. When done, fluff with a fork. You can use it right away or store it in an airtight container in the fridge for later.
✅ 00:54 TROPICAL CHOCOLATE QUINOA BOWL
1 1/2 cup oat milk
2 tablespoons of raw cacao powder
1/2 teaspoon vanilla extract
pinch of cinnamon
sweetener to taste (I used about 2-3 tablespoons of maple syrup)
Combine together the chocolate milk ingredients. I like to shake in a jar. This can be made ahead (store in the fridge).
To serve:
About 3/4 cup-1 cup cooked quinoa
Chocolate milk (see above)
Fruits of your choice: for a tropical bowl, use mango, pineapple, banana, dragon fruit, kiwi, passion fruit, etc.
Toppings: chia seeds, shredded coconut, nuts, hemp seeds, drizzle of maple syrup and granola.

✅ 01:45 STRAWBERRY QUINOA SMOOTHIE
1 - 1 1/2 cup oat milk
1 large frozen banana, roughly chopped
1 cup frozen strawberries
1/2 teaspoon vanilla extract
1/4 - 1/3 cup cooked quinoa
Add to a blender and blend until smooth. You can adjust the amount of milk to the desired consistency and feel free to add more fruit or spices.
✅ 02:21 BLUEBERRY QUINOA PANCAKES
You can add cooked quinoa to any pancake batter that you like. It adds a fun texture that's mostly taste-free, and it makes your pancakes secretly healthier, higher in protein and more filling.
The ingredients I used to make the batter
1 cup flour
1 cup oat milk
1 tablespoon baking powder
1 tablespoon apple cider vinegar
1 tablespoon of maple syrup
pinch of salt
1 teaspoon of vanilla extract
Stir the ingredients together until the batter is smooth and uniform.
Then, add 1/3 to 1/2 cup of cooked quinoa and combine.
Cook the pancakes as usual in a warm pan (I like using a little coconut oil), for about 3 minutes on each side. You can add blueberries while they cook or simply add them to the batter. Serve with maple syrup.
