3 cups flour (bread flour or all-purpose flour) (375 g)
1 tsp salt (3 g)
1 tsp lemon zest (2 g)
1/2 tsp instant dry yeast (2 g) or fresh yeast (6 g)
1 tsp thyme (1 g)
1 tsp rosemary (1 g)
1/2 tsp chili flakes (1 g) (crushed red pepper)
9 oz. olives (green and black) (250 g)
12 fl. oz. cool water (360 ml)
Bake it at 450 F (230 C) for 25 minutes with foil (lid) covered and then for additional 10 minutes without foil (lid).
