Aurey cooks with a Filipino accent: Cordon Blue
INGREDIENTS
FOR THE CORDON BLEU
3-5 pieces chicken breast
1 teaspoon salt
1 teaspoon ground pepper
Cooked sweet ham
cheese slices
1 ½ cup all-purpose flour
eggs
breadcrumbs
oil for frying
FOR THE WHITE SAUCE
2 tablespoon Butter
2 teaspoon all-purpose flour
1 cup evaporated milk
Salt and pepper to taste
Procedures:
1. Pound chicken breast until ¼ inch in thickness. Rub both sides of chicken with salt and pepper.
2. Top chicken breast with slice ham and cheese then roll the chicken. Tightly wrap chicken in plastic wrap to shape it, twist remaining plastic on the sides and tie it. Chill in the ref for 1-2 hours. Or you can use toothpick to fasten the chicken.
3. In separate serving dish season flour, egg and bread crumbs with salt and pepper. Mix well.
4. Then dredge rolled chicken in flour, coat in beaten egg and roll in bread crumbs.
5. Heat enough cooking oil to deep fry in a pan and fry breaded rolled chicken until golden brown. Drain excess oil in paper towel. Sliced chicken and it’s ready to serve!
HOW TO COOK THE WHITE SAUCE
1. Melt butter in a pan under low heat. Then, add the all-purpose flour.
2. Stir and cook for 3 to 5 minutes until the flour is cooked.
3. Then, add the evaporated milk small amount at a time while stirring. Make sure that there’s no lumps. Let it boil using low heat until thick and creamy
4. Once the white sauce turns thicker, season with salt and pepper to taste. Mix well and set aside.
5. Serve the chicken cordon bleu with the white sauce. Enjoy!
