For the dough:
3 cups all-purpose flour
2 ¼ teaspoons active dry yeast
1 tablespoon sugar
1 teaspoon salt
1 cup warm milk
1/4 cup melted butter
1 egg
For the chicken filling:
2 cups cooked and shredded chicken
1 onion, finely chopped
2 cloves garlic, minced
1 tablespoon ginger, minced
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon turmeric
1/2 teaspoon chili powder (optional)
Salt and pepper to taste
2 tablespoons olive oil
2 tablespoons chopped fresh cilantro
For the egg wash:
1 egg, beaten
1 tablespoon milk
Instructions
Preparing the Dough
In a small bowl, dissolve the sugar in warm milk and sprinkle the yeast over it. Let it sit for about 5-10 minutes until it becomes frothy.
In a large mixing bowl, combine the flour and salt.
Add the melted butter and the egg to the yeast mixture, and then pour it into the flour mixture.
Knead the dough until it becomes smooth and elastic, about 10 minutes.
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Preparing the Chicken Filling
Heat the olive oil in a large skillet over medium heat.
Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
Add the curry powder, cumin, paprika, turmeric, and chili powder. Cook for another minute until the spices are fragrant.
Stir in the shredded chicken and mix well to coat the chicken with the spices.
Season with salt and pepper, and cook for another 5 minutes, allowing the flavors to meld together.
Remove from heat and stir in the chopped cilantro. Let the filling cool to room temperature.
Assembling the Buns
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Punch down the risen dough and divide it into 12 equal pieces.
Roll each piece into a ball, then flatten it into a disc.
Place a spoonful of the chicken filling in the center of each disc.
Fold the edges of the dough over the filling and pinch them together to seal, forming a bun.
Place the buns seam-side down on the prepared baking sheet.
Brush the tops of the buns with the egg wash.
Baking the Buns
Bake in the preheated oven for 20-25 minutes, or until the buns are golden brown.
Remove from the oven and let them cool slightly before serving.
