Ube Painkiller
Jamaican Rum, Pineapple Rum, Pineapple, Orange, Coconut, Pandan, Ube
A bunch of you asked for an ube drink, so here it is: the clarified ube painkiller. Adding ube and pandan to the drink brings a south east asian twist to the tropical classic. I feel like its easy to conflate ube, coconut, and pandan together so having all 3 really sells that earthy vanilla flavor without overpowering the cocktail.
The only other hack was to acid adjust orange juice- bringing lime into the equation would create unnecessary dilution and potentially overpower the cocktail so we tune the orange to the acidity of lime.
the ube coloring actually gets ripped out of the milk wash, so in order to get it a bit more presentable, i steeped the cocktail in butterfly pea flowers to get it back to a more palatable color
3.5 oz Jamaican Rum
1 oz Pineapple Rum
3 oz pineapple juice
1 oz acid adjusted orange juice
2 oz coco pandan cream
2.5 oz milk
ube extract

Add first 5 ingredients into a vessel, stir to combine. In a separate vessel, combine milk and ube extract, then pour rum mix into the milk. Wait for 15 minutes, then filter. Liquid will run cloudy, then clear. Take the cloudy mix and re run it through the filter until all the liquid is clear. Liquid should have a green-blue tint, so pass this through a handful of butterfly pea flowers until the cocktail is a desired purple hue. Store in fridge, and when ready to serve, pour 3.5-4 ounces over ice.
Coco Pandan Cream
200 ml coconut milk
180 g sugar
5 gram pandan
Heat coconut milk and pandan until a light boil, then cut heat and let steep for 10 minutes. Add sugar, stir to combine, and reserve
Acid Adjusted Orange juice
100 ml orange juice
3.2 g citric acid
2.0 g malic acid
Mix orange juice and acids together until they dissolve.
