Ingredients:
1 bunch of fresh spinach (palak), washed and chopped
200g paneer, cubed
1 onion, finely chopped
2 tomatoes, pureed
2 green chilies, chopped
1-inch piece of ginger, grated
3-4 cloves of garlic, minced
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1/2 tsp garam masala
Salt to taste
Oil for cooking
Instructions:
1. Heat oil in a pan and add cumin seeds. Once they start spluttering, add chopped onions and sauté until they turn golden brown.
2. Add ginger, garlic, and green chilies. Sauté for a minute.
3. Add tomato puree and cook until the oil separates from the mixture.
4. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes.
5. Add chopped spinach and mix well. Cover and cook until the spinach is wilted.
6. Blend the spinach mixture into a smooth paste using a blender.
7. Return the blended mixture to the pan and add cubed paneer. Cook for a few minutes until the paneer is heated through.
8. Sprinkle garam masala on top and mix well.
9. Serve hot with rice or roti.
