This is the recipe I couldn’t find! Make ahead bread dough that is soft, fluffy and, to quote my husband, bomb diggity.
These rolls are perfect for thanksgiving because you can mix them up the day before or the morning of, just pick the version that fits your schedule (and they can sit for hours before baking if there is a delay! 😅)
A simple enriched dough with half whole wheats brings nutty and buttery goodness to make your taste buds sing 🤗 but that’s enough of me waxing poetic. Can you tell I really love bread??
Here’s the recipe:
2 C all purpose flour
2 C whole wheat flour
2 Tbl gluten flour (aka vital wheat gluten)
1 Tbl salt
1 Tbl dry yeast
3/4 C milk
3/4 C water
1/4 C melted butter
1/4 C honey
Stir together dry ingredients. Add wet ingredients and knead (in a mixer or by hand) until dough is soft and tacky (but not sticky) and you can stretch a piece out enough to see light through it without breaking.
Note: if you are planning to shape and/or bake the same day as mixing, use warm water to help activate the yeast.
Let dough rise for at least an hour in a warm place (until doubled in size) OR overnight in the fridge.
At least 2 hours before you’re ready to eat, punch down your dough and let it rest for 10 minutes.
Divide into 12 equal-ish balls and place on a silicone or parchment paper lined baking sheet with some space between them to rise.
Cover and let rise for 1-2 hours in a warm place, OR overnight in the fridge.
Brush with melted butter. Bake at 350 for 20 minutes. They should be beautifully brown on top and about 190 degrees inside.
If you forgot to brush them with butter before baking, like I ALWAYS do, go ahead and do it now 😂
