Moussaka S1 - P30
An icon of Greek cuisine. Moussaka is like our lasagna! There's no pasta, and the layers of eggplant, béchamel, and ragù are much more substantial. And like Italian lasagna, there are myriad versions of moussaka, but they all have one thing in common: they're all delicious!
► Ingredients for the moussaka:
3kg eggplant
1kg ground beef
½ cup red wine
600g peeled tomatoes, chopped
6 potatoes
1 stick of cinnamon
Nutmeg to taste
Salt to taste
Pepper to taste
1 onion
3 tablespoons tomato paste
Oil for frying to taste
40g Parmesan cheese
1 bay leaf
1 clove of garlic
1 egg white
Béchamel sauce
1 liter of milk
100g butter
100g flour
Nutmeg to taste
20g Parmesan cheese
3 egg yolks
Salt to taste
