Chicken Dropping Soup
This tasty Hainan dessert soup has the funny name of "chicken dropping soup". The “chicken droppings” are actually made from a mixture of ground fevervine leaves, flour, and sugar. Nothing that actually comes from a chicken! The mixture is formed into small round balls, and cooked in a broth of coconut milk or ginger water. This dessert soup is not only refreshing and sweet, but is also known throughout Hainan as a health tonic.
