This video is a fast demonstration on making English Muffins. The recipe and instructions are below.
½ cup Milk
1 Tablespoon Sugar
1½ teaspoon Yeast
1 cup Warm Water
2 Tablespoons Butter Room temperature
3 cups AP Flour
¾ teaspoon Kosher Salt
Combine all ingredients and mix for 10-12 minutes or until gluten is developed.
When the dough is developed kneed to finish.
Place dough in a lightly oiled bowl.
Cover and let rest until doubled in size.
After the dough has doubled in size roll the dough out into 1/2”. Sprinkle the top with semolina flour.
Using a 2 ½” -3” cookie cutter or water glass cut the dough out and place the top side down on a sheet pan. Dust the new top with semolina. Now both the top and bottom will have semolina on them. Cover and let rest until the dough has raised again. (About 1 hour)
Heat a griddle or sauté to 325 degrees. Lightly oil the cooking surface.
Place the muffin on the heated surface and cook 10-minutes per side or until the inside reaches 200 degrees. If you think it is getting to dark and your pan or griddle is too hot you can brown both sides and finish in the oven at 350 degrees. If you are unsure you can preheat your oven and have it ready to go.
Let cool and cut open for presentation.
