Seafood Mee Goreng (20 minute weeknight meal!)

Mee Goreng is a popular noodle dish from south east Asia, and I love this version featuring tons of seafood.

This meal comes together in 20 minutes, making it the perfect dinner any night of the week :D

INGREDIENTS

1 tbsp ketchup
1 tbsp oyster sauce
1 tbsp sweet soy sauce (kecap manis)
2 tbsp water
Pinch of sugar
Kosher salt to taste
2 tbsp canola oil
¼ cup sambal oelek
3 cloves garlic, finely minced
1/3 cup thinly sliced shallots
½ cup peeled and deveined shrimp
1 small squid, cut into ¼ inch rings
½ cup sliced fish cakes
1 lb Chinese yellow noodles
2 stalks yu choy, cut into 2 inch pieces
2 large eggs, whisked
½ cup bean sprouts


METHOD

To a small bowl add ketchup, oyster sauce, sweet soy sauce, water, sugar, and a pinch of kosher salt. Mix to combine and set advise.

Add oil to a large wok on medium high heat. Once hot add sambal oelek, garlic, and shallots,and saute until the chili sauce has reduced and the garlic and shallots are fragrant.

Then add in the shrimp, squid, and fish cakes and saute until the shrimp are barely cooked through.

Increase the heat to high, and add in the yellow noodles, yu choy, and prepared sauce. Stri-fry for 2 minutes, mixing well to coat the noodles with the sauce.

Push the noodles to the side, and add the whisked eggs in the empty space. Scramble the eggs, and then fold into the noodles. Add the bean sprouts, and continue cooking until softened.
