Here is what it's like to play Honkai Star Rail in Immersive Mode, Augmented Reality Mode, and while Multitasking/playing-in-bed. Hope it helps showcase what it's like.

I had a lot of trouble getting quality footage, as the recording seems to add a lot of blurring to places, frame drops, sound gets dampened after opening apps menu, and keeping the headset cameras in frame of the windows was tough. The frame drops/blurring don't happen much when using the headset. Hopefully it gets better as visionOS updates come in.
As for the gameplay of HSR itself, it's the iPad app, but on a bigger screen. Vision Pro touch/eye-tracking does work, but when actively playing, a controller is my preference. Minor things could be fixed like having to manually switch from Screen to Controller mode every time I launch the game. You can use both at the same time in Controller Mode, but not in Screen mode with a PS5 controller. Performance is fine when not recording and on 60 fps/Very High settings.
I personally play HSR this way for a couple of hours on weekends. On other days, I play the game on my PC and log off within 30 minutes. The main benefits are: a much bigger screen, spatial audio, and ability to dim/remove your surroundings. The screen can almost fill up the height of my wall. The spatial audio lets you feel the 3D/physical presence of some sounds. The dimming is useful for darkening surroundings or blotting them out completely like on a plane. In short, it's playing the video game in theater mode.
This might be more interesting for people eye-ing Gen 2 or Gen 3 headset. I have the vision pro due to some personal dev work, and appreciate the compatibility for HSR. It wouldn't make sense for me or many others to buy the VP at that price point to play HSR, but it is fun to play the game this way
