Sydney wants to make sure Carmen is okay and doesn't suspect her of having gone behind his back to force him to put her risotto on the menu; Carmy simply doesn't care about this reviewer's opinion, and just wants to keep the peace in the kitchen. The rest of the staff, ignorant of the power struggle between Carmen and Sydney, are just happy to see their hard work valued by an outsider.
