This has got to be the best mince pie recipe to make the best mince pies in the World - or so my family think so. They are so much better than even the Award Winning shop mince pies - you can't beat homemade mince pies. These 'Orange with Cointreau Mince Pies' from the Readers Digest Cookery Book are amazing, gorgeous, delicious, scrumptious - even better than words can describe.
How to make mince pies? Here's what you will need to make 40 of your own best ever Mince Pies:
For the pastry:
20oz Plain Flour
6oz Butter
4oz Lard
6 tablespoons of Fresh Orange
2 large oranges
For the filling:
Large jar of mincemeat 850g
2 Cox apples
2 tablespoons of Cointreau
Bake in a preheated oven for 15 minutes at 200c/400f/gas 6. Once cooked, these can be put in a freezer bag and frozen up to 4 weeks before Christmas (just don't sprinkle with icing sugar). When you want them, just take them out and leave them to defrost for 2 hours and give them a sprinkle of icing sugar once fully defrosted.
