This green brinjal stir fry is inspired by a Konkani recipe called Gulla Talasani. Gulla is a special type of brinjal typically grown in India. Since we couldn't find Gulla here in Australia we have made this recipe from a similar variety of green brinjal which tastes almost similar to 'Gulla Talasani'. This stir fry is a straightforward recipe, doesn't take much time to prepare, and goes very well as a side dish with rice.
