Sucrose intolerance, also known as sucrase-isomaltase deficiency, is a food intolerance in which table sugar (sucrose) or maltose is not tolerated. It is an enzyme deficiency of the small intestine. Due to the lack or insufficient enzymatic activity, sucrose cannot be broken down into glucose and fructose. The secondary form of sucrose intolerance is very common, usually resulting from acute intestinal inflammation or another disease of the small intestine, such as celiac disease, gluten intolerance, leaky gut syndrome, or small intestinal bacterial overgrowth (SIBO).
